Ascorbyl palmitate is a type of ester made from ascorbic acid (vitamin C) and palmitic acid. It is white to off white powder, soluble in water, vegetable oil or ethanol. Ascorbyl palmitate is a good source of vitamin C as well as great antioxidant for food. Its molecular formula is C22H38O7 and its CAS number is 137-66-6.
